Hazelnut Bites of Goodness with Nutella
True hazelnut lovers will be delighted with the taste of these no-bake, tiny cookie energy bites! Simple and easy to prepare, beautiful and decorative. Ideal for festive occasions as they can be prepared a few days in advance.
Put sugar, butter, and chocolate in a pan, then let melt over low heat. Remove from the stove and immediately add the biscuits and ground hazelnuts to the hot mixture. Add the vanilla extract. To speed up the preparation, try putting the mixture in the freezer as soon as it cools down and begins to tighten, remove it and the bites or nests will be easier to shape.
When the mixture has cooled down, form balls with damp hands, roll each into ground hazelnuts and arrange on a tray lined with streak-foil or baking paper. Use a spoon handle or just punch a hole with your finger. Pour Nutella or your other favorite chocolate spread into a syringe for decoration and fill the nests. Leave to cool for a few hours.
Tips and Storage
These delicious decadent bites are nicer if made a few days before, to dry and tighten nicely. Therefore, do not be surprised if they appear to be soft when molding, when they settle the mixture will get firm. This recipe will yield about 60 larger bites (about the size of a nut in a shell).
If the Nutella is too tight to squeeze out of the syringe, you can warm it up briefly in the microwave.
You might want to try and use peanut butter, instead of regular. Try substituting the crushed hazelnuts with coconut flour.

- 1 cup butter
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 1 cup of chocolate chips
- 1 cup crushed hazelnuts (more as needed)
